Ingredients
2-3 lbs pork butt or pork shoulder
1/2 cup water
6 each garlic cloves
4 each bay leaf
1 cup yellow onion rough chopped
3 Tbsp kosher salt
1 Tbsp coarse black pepper
1 Tbsp light chili powder
½ cup Brown Sugar
Ingredients for easy BBQ sauce
Will be added to the top side of pork during the last 15 mins of cooking
4 cups ketchup
1cup dijon mustard
2 cup brown sugar
2 tablespoons Worstershire
( if you like spicy add 2 Tbsp of canned chipotle minced)
Cooking instructions
Mix salt, black pepper, chili powder, brown sugar in a small bowl and set aside
In a large casserole dish add water, whole garlic cloves, chopped yellow onion and bay leafs
Then add Pork fat cap side up to casserole dish
Take spice blend and coat the top side of pork from one side to the other
Cover tightly with foil and place in 300 degree oven for 4 hours and 45 minutes
While Pork is cooking take all ingredients for easy BBQ sauce and mix well together using a whisk. Set aside,
When timer ends pull pork from oven and carefully remove foil. Generously coat top of Pork with 1/2 amount of Easy BBQ sauce Place back into oven for 15 more minutes
Pull pork carefully from oven. Do not touch glaze it will be extremely hot and can cause severe burn from caramelized sugar
Let cool in a safe spot for 15 min
With two large forks start to separate tender meat pulling it apart until roast is completely pulled and shredded add and mix in reserved Easy BBQ sauce
Best served on grilled white bread or brioche bun topped with tangy poppy seed coleslaw
Red rose potato wedges and melon salad make a great accompaniment with the pulled pork sandwich
